In TOS we have for the most part the 3 colors for uniforms blue for science and medical, red for operations (security, engineering, etc), and gold for command later green for the Captain. I saw the 2 pilots for TOS ("The Cage"and " Where no man has gone before") and saw they had a tan color shirt for operations officers instead of red. My question is was this due to remastered episodes or did I just never notice it before? I always thought that both operations and command officers wore gold in the 2 pilots and from the "Menagerie" ??

The difference in colors was subtle, so I'd say that you only noticed because the remastering made it more obvious.

they changed it because command in tng is red where that was engineering in tos

Did you also notice in some of the very first episodes, Uhura is wearing a command gold uniform?

I only remember one or two episodes ("The Corbomite Manuever" for one) in which she wore the gold uniform. It's possible she transfered and then found she didn't like it.
And speaking of noticing things for the first time, here's something I noticed only when I got the DVD version of season three. In "Spock's Brain", they beam down to a planet in an ice age. The first thing Kirk says is, "Set suit temperature to 72 degrees." Evidently those uniforms had heating elements in them!

I never notice the temperature part in "Spock's Brain" either. It can be easy to miss something that is more in the background!

Somewhat unrelated, but I think the new movie had better uniforms. It looked much more comfortable than the originals.
