They are a Star Trek icon and perhaps we might see a return of them for the next movie. It would be interesting to see Pine interact with them as Shatner did in Arena. Seeing as this is an alternate timeline, they no longer have to worry about canon. Which means there is a lot of material they could use to form a new movie.

Seeing as this is an alternate timeline, they no longer have to worry about canon. Which means there is a lot of material they could use to form a new movie. Actually, they still have to worry about canon to an extent. Everything that happened prior to Nero arriving in the 23rd century has still happened. So Khan and the others are still out there floating around in the Botany Bay (though it still remains to be seen if we'll have a story about Khan in this new timeline). And theoretically, the events of "Arena" could still unfold as they had before, which means if they don't cover the Gorn in this new timeline we can assume that it pretty much did. Additionally, I don't think I'd go so far as to call the Gorn a Star Trek icon. After all, if memory serves they only made two appearances in all of Star Trek (once in "Arena" and once in Star Trek: Enterprise). But personally, I'd rather have brand new stories and just assume that most of the episodes unfolded as they did before ("Amok Time" being an obvious exception).
